Duck or besha  is a favourite of the Mandaean community.  They cook it in a way that is quite different to other nations, even the Iraqis and it is eaten sometimes several times a week.  This method of boiling the duck in spices and dried limes provides a rich tangy soup to start a meal.

Sean Connolly is invited to a very special weekend four generations of the Pacialeo family who get together each year in late Summer for a weekend of tomato bottling.  Boxes of juicy Roma tomatoes are delivered to the house and the weekend begins.  Everyone has a job to do, from 4 year old Amadeo, to the proud 87 year old patriach, Uncle Antonio. At the end of the day, the bottles of fresh tomato sauce are left overnight to cook and the next day the family gathers once more to collect their sauce supply for the following year and to celebrate with a delicious Calabrian feast.

Bengali bride Shrabastee and her Punjabi groom Ankit represent the coming together of two traditional Indian families in the heart of Australia. Sean Connolly is invited to their wedding, which culminates in a colourful and opulent vegetarian feast. A week later, family and friends invite Sean to view photographs of the occasion when Shrabastee’s parents farewell their daughter who will now join her husband’s family.

Sean Connolly is invited to celebrate the feast day of St. George, with George Gavalas and his extended family.

Name Days, not birthdays, are celebrated in Greece. Great significance is attached to the name given a child, and the process of choosing a name follows quite rigid conventions. Children are never named after parents, but the eldest son in a family is often called after his paternal grandfather and the oldest daughter after her paternal grandmother. Names are usually of religious origin. Each saint has a special feast day and a person's name day is the feast day of the saint after which they were named. Open house is held and a feast laid on for friends and neighbours. Small gifts are given, but there is less emphasis on the giving of presents than the celebrations.

My Family Feast - ROAST PIG with ORANGE MARINADE

Anerys injects the under layer of skin on the pig with her orange marinade before cooking it in her special China Box.  It is a portable roasting oven imported from Florida in the United States, which has a grill frame for the pig to sit in. A tray of hot coals sits on top of the box and provides enough heat to cook the pig within.

The lid of the box totally encloses the pig so that heat surrounds the meat. It was given the curious name of ‘China Box’ because, as the story goes, any clever invention in Cuba was known as ‘Chinese’.

If you don’t want to use a needle to inject the skin of the pig, score the skin to allow the marinade to penetrate through to the underlayer of fat for extra flavour.
