Pati is a busy mom on the go. If you’re a mom that likes to cook for your family and take your kids to school, practice and everywhere else, you need a few quick and easy meals in your arsenal. Pati’s oldest sister Karen, who has older kids, shares a few tips as she visits her restaurant in Mexico City. Then, back at home, Pati shows us some of her go-to weekly dishes.
Cocktail de Papaya
Serves 4 as cocktail, 10 as relish
INGREDIENTS
– 6 cups diced, peeled and seeded ripe papaya
– Zest of 1 lime
– 6 tablespoons freshly squeezed lime juice
– 1 to 2 tablespoons agave syrup or honey, maple syrup, or sugar, or to taste
– 2 tablespoons finely chopped fresh mint leaves
DIRECTIONS
In a large mixing bowl, combine diced papaya, lime zest, lime juice, and agave syrup, or other sweetener, and toss well. Sprinkle on finely chopped fresh mint to garnish. Serve with the pound cake or on its own.
