INGREDIENTS
Breakfast Burger Patties
1 1/2 pounds ground pork
1 egg
1 small apple, grated
1 tbsp. honey
1 tbsp. Dijon mustard
1/2 tsp. onion powder
1/2 tsp. garlic powder
Pinch cayenne, to taste
1/2 tsp. allspice
Salt and freshly ground pepper, to taste
2 tbsp. bread crumbs
Vegetable oil, as needed
Assembly
4 to 8 slices bacon
4 eggs
Olive oil, as needed
6 English muffins, sliced in half, toasted and buttered
Mayonnaise, as needed
4 lettuce leaves
8 slices aged cheddar cheese
1 small tomato, sliced
Baked Fries, for serving (optional)
PREPARATION
Breakfast Burger Patties
In a large bowl, combine ground pork, egg, grated apple, honey, Dijon, dried herbs and spices, salt and pepper and breadcrumbs. Mix to combine.
Divide mixture into 8 and shape into thin round patties. (There will be 2 patties for each sandwich.) Brush patties with a little oil.
Heat grill or griddle over medium to medium high heat. Brush with oil. When oil is hot, add patties. Cook patties until golden brown on each side and meat is cooked through, about 2 minutes per side. (Makes 8 patties.)
Assembly
While patties are cooking, fry bacon in large non-stick fry pan over medium heat, until golden and crispy, about 8 to 10 minutes. Drain on paper towel to remove excess fat. If desired, cook eggs in the bacon fat for extra flavour or drain bacon fat from pan and add olive oil. Fry eggs over medium to medium low heat to your preference.
Assemble each sandwich: English muffin half, mayonnaise, lettuce, burger patty, cheese slice, bacon, English muffin half, mayonnaise, tomato, burger patty, cheese slice, fried egg, English muffin half. (Makes 4 sandwiches.) If desired serve with Baked Fries.
Yield: 4 servings.
